There are two incredibly important food related emails that Dateline staffers look out for.
One kind comes from producer Izhar Harpaz, titled "It's Friday, It's Coffee."
The other comes from Cathy Singer, the producer of this week's report. She makes the best brownies and blondies on the planet, and when she brings them in, we all come running.
She's graciously decided to share the recipe for her blondies with the world. Her brownie recipe, we suppose, is still a closely guarded secret.
CATHY SINGER'S FAMOUS BLONDE BROWNIES
Preheat Oven to 375 degrees
Recipe makes 48 blondies- 2 roasting pans
MIX TOGETHER:
3 cups flour
4 teaspoons baking powder
slightly less than 1 Tablespoon salt
1 cup margarine (two sticks - best if at room
temperature or slightly melted in microwave)
2 cups sugar
2 cups light brown sugar tightly packed
(NOT granulated)
1/3 cup water
3 eggs
4 teaspoons vanilla extract
THEN ADD AND MIX MORE:
3 cups raw quick cooking oatmeal
2 cups chocolate chips
BAKE IN 2 PANS ABOUT 9x13
- greased and floured -
FOR ABOUT 20 MINUTES
(depends on pan/oven/etc)
DO NOT OVERBAKE!!!
Even though this recipe makes a lot of brownies, do NOT cut the recipe in half due to the 3 eggs - they won't taste as good with 1 or 2 eggs (I've tried!) They freeze really well though - so save what you don't need in the freezer.
