Chef Sam Choy, 'Godfather of Poke,' On Hard Work, High Goals, and Having Fun

Known as the "godfather of poke," Chef Sam Choy says he's been in "battle" with poke forever. "Poke, I felt, had the same billing as sushi and sashimi," Choy said of the popular raw fish dishes.

These days, the Hawaiian dish's popularity is spreading across the U.S., and along with being able to share his love of fish with a new generation, Choy is also passing on his lessons on cooking: "Always cook from your heart to your hands to your wok."
